Indian Recipe for Vegetable Manchurian with Gravy to make at Home

Vegetable Manchurian is an all time favorite dish of almost everyone. It is a fusion of Indian and Chinese cuisines which you will find listed on a Chinese restaurant menu in India. Indo-Chinese version of Veg Manchurian is spicier than Chinese versions. It is made up of deep fried mixed vegetable balls in tangy & spicy soya sauce based gravy. It can be served with rice/noodles as an appetizer, evening snack, or a main dish. You can make vegetable manchurian easily with or without gravy at home. Here are some of the recipes of Vegetable Manchurian with Gravy.

Recipe of Vegetable Manchurian with Gravy

Recipe 1

  • For Manchurian balls:
    • 200 gm Maida Flour
    • 50 gm Corn Flour
    • 150 gm Carrot (grated)
    • 150 gm Cabbage (grated)
    • 50 gm Capsicum (finely chopped)
    • 1 Green Chilli (finely chopped)
    • 1 tsp Pepper Powder
    • Ajinomoto (MSG) a pinch
    • Cooking Oil
    • Salt to taste
  • For Gravy:
    • 10 gm Ginger (finely chopped)
    • 5 gm Green Chilli (crushed)
    • 10 gm Garlic (finely chopped)
    • 1 tsp Spring Onion (finely chopped)
    • 1 Tbsp Cooking Oil
    • 2 Tbsp Soy Sauce
    • 1/2 Tbsp Chilli Sauce
    • 2 Tbsp Tomato Ketchup
    • 1 tsp Pepper Powder
    • 2 Tbsp Corn Flour
    • 2 cup Hot Water
    • Salt to taste
Method of Preparation:

To make balls, take a large mixing bowl and put carrot, cabbage, capsicum, pepper powder, green chilli, salt, maida, ajinomoto, corn flour and oil (1 tsp). Mix all the ingredients properly and make small balls without adding water. Now, heat the oil in a pan to deep fry the balls. Fry them till they become golden brown and keep aside.

For gravy, heat oil in a pan and add ginger, garlic, spring onion and green chilli. Sauté them for couple of minutes and add hot water in it. After that, add salt, pepper, chilli sauce, soy sauce and tomato ketchup. Now in a small bowl, mix corn flour with water and add it in the pan. Cook for 1 min and add fried Manchurian balls. Again, cook for 3 mins and Veg. Manchurian is ready to serve with fried rice or noodles.

Recipe 2

  • For Manchurian balls:
    • 250 gm grated cabbage
    • 1Tbsp grated carrot
    • ½ tsp Chilli Sauce
    • ½ tsp Corn Flour
    • ¼ tsp Soy Sauce
    • Oil for deep frying
    • Baking Soda (a pinch)
    • 1 finely chopped green Chilli
  • For Gravy:
    • 1 Tbsp chopped carrot
    • Salt to taste
    • ¼ tsp ginger, chopped
    • ½ tsp Corn Flour
    • ¼ tsp oil
    • 1 cup water
    • ¼ tsp Chilli Sauce
    • ¼ tsp Soy Sauce
    • 5 cloves green garlic, chopped
    • 3 small spring onions, chopped
    • Black pepper powder (a pinch)
Method of preparation:

Take a mixing bowl and add all the manchurian balls' ingredients in it. Then make small balls from the mixture and deep fry them in hot oil. To make gravy, take a pan and put oil in it. Add green garlic, spring onion & ginger and sauté them on high flame. After that, add carrot, salt, pepper, Chilli Sauce and Soy Sauce. In a small bowl, make a paste of Corn Flour and water. Now add this paste in the pan and bring it to boil. After 2 mins, take away the pan from heat and add fried manchurian balls. Garnish it with spring oinion and serve hot.

Recipe 3

  • 100 gm cabbage
  • 30 gm long green beans
  • 150 grams carrots
  • 1 cup boiled rice
  • 2 pieces celery (optional)
  • 3 pieces chopped green chillies
  • 2 capsicum pepper
  • 50 grams cauliflower
  • 1 large chopped ginger
  • 3 Tbsp chilli paste
  • 30 grams chopped garlic
  • 3 Tbsp corn flour
  • 2 onions
  • 1 tsp sugar
  • Salt to taste
  • Oil for frying
  • 4 Tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 springs spring onion
  • 2 tsp pepper powder
  • 3 Tbsp sweet and sour sauce or 1 Tbsp tomato ketchup
Method of preparation:

To make manchurian balls, steam the chopped vegetables for 5 to 10 minutes and squeeze all the water. Keep the water to use it later as vegetable stock. In a big bowl, add steamed vegetables, chopped green chillies, salt, pepper powder, ginger, garlic, little soy sauce, spring onions, corn flour and little chilli paste. Make small balls and deep fry them after rolling in corn flour.

For gravy, take a pan and heat oil. Add onions (regular and spring), chopped ginger & garlic and sauté them. After that, add green chillies, pepper powder, soy sauce, sweet n sour sauce, chilli paste, salt and sugar. Now in another bowl, make a thick paste by mixing cornflour and little water. Pour this cornflour mixture to the pan and add vegetable stock. Let the gravy to boil and then add fried manchurian balls. Serve with noodles or rice.

Recipe 4

  • For Manchurian balls
    • ¼ cup frozen/ fresh peas
    • ¼ cup carrots, grated
    • ¼ cup paneer, grated
    • 1 spring onion, chopped
    • 2 cups cabbage, grated
    • 1-2 garlic, minced
    • ¼ cup frozen/ fresh beans, chopped
    • 1 potato steamed and mashed
    • 1 Tbsp soy flour
    • 1 inch ginger, grated
    • 1 green chilli, thinly sliced
    • Salt and pepper to taste
  • For Manchurian Gravy
    • 1 inch ginger, grated
    • 2-3 garlic, minced
    • 1-2 green chilli
    • 1-2 tbsp Soy sauce
    • 1/2 tsp of sugar
    • Salt to taste
    • 3 spring onions, greens and whites separated
    • ¼ cup bell peppers, finely chopped
    • 2 Tbsp cornflour mixed with 1 cup of water
Method of preparation:

Add all the manchurian balls ingredients in a bowl and mix well. You should boil and mash fresh beans and peas. Make balls from the mixture and keep in the refrigerator for about 15-20 mins. Deep fry these balls after coating them in all purpose flour.

To make gravy, take a non stick pan and put oil in it. Heat oil and add ginger, bell peppers, onion whites, chilli & garlic and saute for 1min. Add cornflour mixture, soy sauce, half of spring onion greens, salt and sugar. Let the gravy to boil till it becomes thick and add the balls to it just before serving.
